For our family barbecue this Sunday, I decided to make a dessert for Ben's birthday that he's been requesting ever since we ate at 112 Eatery - Tres Leches Cake. A bonus was that he actually hadn't asked about it in awhile, so he was even surprised!
I used the recipe from Pioneer Woman, and it all went really well. I was a bit nervous since it required beating egg whites, and my last attempt at that was a big fat failure. Since then, I have avoided recipes that require that. Now I have conquered my fear, and the baking world is my oyster!
Everyone seemed to think this cake was delicious but me - so I'm not sure if they were just being polite, or what. The milk mixture just didn't seem sweet enough - I'm not sure if I used too much evaporated milk/cream in the mixture and not enough sweetened condensed milk - who knows. The recipe just calls for "one can" of each, not specific amounts. I still happily ate the piece I had, but it was not nearly as good as the cake at 112 Eatery. Ben enjoyed it, so that's all that matters to me!
Stiff peaks!
This is when it became obvious that our house and oven are not level. Good thing that didn't really matter with this cake at all :)
Ben made me risk spilling by looking and pouring at the same time
Cherries on top - my favorite part

I was NOT being polite. It was delicious. I liked it cause it was different than what we usually have (i.e. chocolate), and was moist and just sweet enough!! :)
Looks yummy. Love the cherries on top.
Tres Leches is my all time favorite cake.
