We eat chili all the time, but Ben wanted to shake it up a bit and use squash and greens in chili, so he found this recipe for Black Bean Chili with Squash and Chard. After our CSA is over, we get into a rut of eating like crap and not eating our veggies, so it was time to get back to eating somewhat healthy. We added the entire squash and all the chard from a fairly large bunch, so this made more than the recipe calls for.
I also made a batch of my favorite cornbread - I just realized I've never blogged this recipe before - I've blogged about a few other recipes, but this is the one I've made time and time again because it is perfectly sweet, super easy, and delicious. I baked them in muffin tins for 15 minutes.
The best part? Annie LOVED it. She ate a fairly big bowl (for her - maybe... a little shy of a cup?) both yesterday and today. Today I gave her a little treat and also put some shredded cheese on her tray with it, after she refused to eat any more from the spoon. She even ate all the chard - she was probably thinking "omg! Leaves again! YESS!"

Do you mash up the chili any more, or is it soft enough like that for her already? I'm so paranoid about choking, I think it's keeping me from feeding Mason foods he could actually be eating by now. I was going to try blueberries the other night and then got paranoid. I want to try black beans, too, but I'm scared... You're my baby-feeding teacher, so I'm trying to learn! :)
