I was going to wait to post these because I didn't want to do 2 cupcake posts in a row... but I just found out that the blog Cupcakes Take the Cake posted a few of my photos so I feel like kind of a big deal now :) It is a great blog for cupcake lovers! And really, besides Scott, I don't know a single person who ISN'T a cupcake lover :) He also doesn't like pizza, pancakes, or french fries, so really, he can't be trusted.
I had bought buttermilk to make the Red Velvet cupcakes, also used to make buttermilk pancakes, but still had some leftover. Liz's Cooking Blog has labels for almost all the ingredients in her recipes so I knew I could head over there to click on her buttermilk label and find something to make! I found what I was looking for in these strawberry cupcakes, which she found on Annie's Eats, who modified a recipe she found on Good Things Catered :) All three of them raved about these so I knew they'd be awesome!
I made them on Sunday (had to find an excuse to use the mixer again!) because Ben ended up having a few people over to watch the superbowl while I was volunteering. They were a huge hit! I loved these - the chunks of strawberries made them almost muffin-like (but still very light and fluffy) and the frosting was delicious!

i hate that you don't specifically invite me over for cupcakes. they are honestly my favorite. PS i have been planning on making the coconut cupcakes mom adores for Monday night's dinner. Let me know if you had other dessert plans because i can postpone it. I love you older sister!

I certainly don't mind two cupcake posts in a row! Those look so, so good.
To be fair, I like cupcakes better than about 95% of other desserts... If you will recall I had cupcakes at my wedding. I just don't like desserts, and cupcakes fall right into that category. Do one about muffins, I like those real good.
