Cookin at the cabin

So as I previously mentioned, I did a lot of cooking up at the cabin. A few things were repeats - I made this cornbread again, as well as this egg bake. Both were enjoyed by all, but I definitely liked the egg bake with meat in it which I didn't do this time... mostly because my mom had already put it in the oven before I even woke up :) The cornbread was good, but I think next time I'll try to find a recipe that is a little sweeter.

On Friday night, I made Chicken Spaghetti from Pioneer Woman. This was total comfort food! It reminded me of Tuna Helper, but in a good way :) This recipe could easily serve 8 people, so I would suggest freezing half of it for later!

Alterations I made to the recipe - only used half of the pimentos because that was the only jar available at the store, used 1 can cream of chicken and 1 can of cream of mushroom. I will definitely be making this again!

On Saturday morning, I set out to make this apple cake that I found on a blog, which was originally from Real Simple. I was actually kind of surprised at the unhealthy-ness of this recipe based on the fact that it is from Real Simple - I thought they were more health conscious than that! 3 sticks of butter in this recipe proved me wrong :) This cake recipe definitely tested my arm strength. I was using a hand mixer that was likely from the 80s, and the batter was THICK!
