Cabin food

So I promised an entire entry about the food we ate while in Ely, and here it is! We obviously ate quite a few meals while we were there, so I will just stick to the highlights and the food that I actually know how it was prepared!

Our first meal was eaten at the Boathouse Restaurant in Ely before we were allowed to check in to our cabin. This place was surprisingly high class for a tiny town in northern MN - we were all pleasantly surprised! They had some great cheese options for the burgers. I had bleu cheese on mine, but there was also Irish Cheddar, gruyere, and some others. Everyone seemed really like their meal. I'm not quite sure why this place was called a "brew pub" because I didn't see any beers that were brewed at the restaurant... but they did have some "good" beers there. I would definitely recommend this restaurant if you are in Ely!

Each couple (Becca and Joe, Ben and I, and Ben's parents) made a dinner, and the singles (Laura, Steve, and Amanda) did one dinner. Laura made brats, and I encouraged her to boil them in beer (Miller Lite, the only beer anyone was willing to "waste" for cooking), Wisconsin style. I thought these were some of the best brats ever, so I do agree that this definitely adds to the flavor!

I made Pioneer Woman's Sleepin in Omelette one morning, with a little help from Ben. Our internet connection was down the night I made it, so I had to improvise a little because I couldn't remember all the steps, and they didn't have onion rolls at Zup's in Ely. The next morning the internet was working again, so I made some last minute additions.

12 eggs (10 were added at night, 2 more the next day with the additional milk)
2 cups milk (1/2 cup was added at night, 1 1/2 cup added in the morning)
4 hard rolls
several shakes of dried onion flakes
1/2 teaspoon of dried mustard
a few dashes of cayenne pepper
salt
ground pepper
1 stick butter
a little less than 1 package cream cheese
1/2 lb breakfast sausage
green onions
1/2 cup Monterey jack cheese

(this is exactly what I did - not what Pioneer Woman says to do, but ours turned out awesome)
Butter a 9x13 baking dish. Break rolls into small pieces and line the bottom, cover with shakes of dried onion flakes. Scramble 10 eggs with 1/2 cup milk and green onions, dried mustard, cayenne, salt, and pepper. Pour over rolls. Cut up one stick butter into small pats and cover the top. Break cream cheese into little chunks and put over the top. Cover and refridgerate overnight. In the morning, add 2 more eggs mixed with 1 1/2 cup of milk and pour that over the top. Sprinkle with monterey jack cheese. Brown sausage and sprinkle over the top. Cover with muffin tin (we had no cover for this pan so we improvised :) and bake at 325 for 45 minutes. Take off muffin tin and turn up heat to 350 and bake for another 10-15 minutes.

For our dinner, I made a 6 layer taco dip, and Ben made enchiladas. Neither is particularly fancy, but both were well received. The taco dip was made much better with the addition of fresh guacamole that Joe made!

Taco dip:
Layer 1 - refried beans (I just used the kind in a can)
Layer 2 - cream cheese and sour cream mixed with taco seasoning packet
Layer 3 - Guacamole (I believe this was made with avacados, tomatoes, red onion, lime juice, 1/2 a Serrano chile pepper, salt and pepper... but I could be wrong)
Layer 4 - Shredded cheese
Layer 5 - Shredded lettuce
Layer 6 - Diced tomatoes
Optional Layer 7 to make it actual 7 layer dip - chopped black olives, which I don't like so I did not include

The enchiladas were made with grilled shredded chicken, black beans, and onions mixed with the enchilada sauce that was made with tomato sauce and a packet of enchilada spices, all put in a tortilla with a little cheese and topped with more sauce and more cheese, and green onions.

Our final meal was made by Ben's mom and dad - grilled beef tenderloin wrapped in bacon and topped with a little horseradish sauce - delicious! We had our green beans from the CSA as a side, steamed and topped with some spices.

You are so freaking cruel, I can't even handle it! I was all full and fulfilled by my Subway lunch and then you had to assault my eyes with this goodness!

At least you got subway! I had 5 day old pasta. Not good. :(
