Pesto, mmm

Pesto is not something I've really had with great frequency in my life, but that may now have to change. We got garlic scapes in our last CSA box, and I saw this blog post, as well as a recipe in our CSA's last newsletter that inspired me to make pesto.

It was actually frighteningly easy, which I loved. I altered the recipes slightly, so here's what I used:

4 garlic scapes with tops cut off, cut into smaller pieces
Approx. 15 small basil leaves
1/2 cup chopped walnuts
some grated Parmesan (how's that for specific? I guess I probably used a little less than 1/4 cup)
Black Pepper
Salt

I put all that into the ole food processor and mixed it all up, and then put in 1/4 cup of olive oil. I think I wasn't supposed to put the Parmesan in with the mix, but oh well, it still seemed to work.

I made it on the same night as the chicken and fennel pizza, so I kept it in that container until the next night. I decided to use it on pasta, so I made some pasta, chicken, and cut up some tomatoes, and threw it all together. I just put a few tablespoons of pesto in and mixed it all up and it seemed to coat the pasta and chicken well. I also put more parmesan and pepper on top, because why not?! Oh and pine nuts too.

Ben and I both loved this meal - it was fresh and flavorful without being too overpowering, and was a filling meal. The amount of pesto looked small, but was fine for 2 bowls of pasta, as well as some crackers later that night!
