Linguine with Collard Greens

Before I write about our meal tonight, I first want to mention that EVERY time I hear or see the word linguine, I think of Linguini and Bob in Minneapolis, where Ben and I went for our very first Valentine's Day dinner, when I was 19. I have no idea why we went there - seems pretty random now. We were the youngest people in the place by at least a decade. Ben and I had been dating for about a month and a half at that point, so it was still kind of awkward :)

Now on to the point of this post. We got collard greens from our CSA this week, and I had found this recipe at just the perfect time (probably because Liz is also doing a CSA in MN and collard greens are in season - funny how that works out!).

We tried it out tonight, and I thought it was very good! I hadn't ever had collard greens before - they are pretty bitter and kind of bland, but they did go well with the rest of the dish. We put too much red pepper flakes in though, because it was too spicy for us!

And here is the final product. A very pretty dish, I think. I think it might have even needed more bacon though, because I feel like we used most of what we made for just the two of us.
